December can be a tough time of year for my family.
Like most, we are faced with the problems of trying to eat healthy during the holidays. We celebrate Chanukah, which lasts for 8 days (nights actually).
It is those nightly celebrations that make life kind of hard. You see part of the Chanukah tradition is eating food cooked in oil. The favorite food is latkes or potato pancakes.
Since we try to be a health-minded family, we are always looking for a change in the latke recipe. Several years ago I asked Department of Agriculture’s Chef Justin about developing latkes that might be a little healthier. As he always does when offered a challenge, Chef jumped at the chance. The results can be found at the website listed below. While some are healthier than others, all are a nice change from the usual. Our favorite is the one with cauliflower.
