tazkisi? taziki? tzatziki!

A few weekends ago a friend of mine made some Tzatziki sauce for me (if you don’t know what it is look here). It was so good and I couldn’t stop eating it. So I decided I wanted to try to make fresh (from scratch) tzatziki sauce myself. I have already tried once to make it and to say it was a disaster would be an understatement. So I spent a few minutes on google trying to find a recipe (well the first few minutes was spent trying to spell it right!) and I came across one I could work with.
The recipe calls for cucumber, so I thought documenting my experience for the blog would be fun, since it involves fresh produce. So I headed over to our local grocery store and picked up the ingredients: cucumbers, Greek yogurt (Fage), dill, garlic and lemon. I also wanted homemade pita chips, so I picked up some pita bread as well. I’m not sure if the cucumbers were from Florida, because they don’t really label cucumbers, but it was the thought that counts and cucumber is in season right now!
Anyways, the recipe was pretty simple: 2 cucumbers, 16 ounces of greek yogurt, 1 teaspoon of finely chopped dill, 1 clove of garlic (I used a garlic press), the juice of one lemon and salt and pepper to taste. I adjusted my recipe slightly as I only had 14 ounces of yogurt, so I did a little less cucumber (I ate the rest), a little less dill and what I believe now was my mistake: I did not adjust the garlic correctly. Continuing on my adventure – I removed the skin off the cucumbers, then deseeded them, chopped up the cucumber and tossed it into the food processor. Then I added the garlic, lemon, and some salt and pepper. I processed it until it was blended, but not smooth. I think now I should have kept processing it until it was a little smoother. Once that was done, I just mixed the cucumber puree with the greek yogurt and added some more salt (to taste) and voila! Tzatziki sauce.
So I eagerly take a huge spoonful to try because remember, I love the stuff, and I have to say it was pretty good. I was pretty impressed with myself, especially after my last attempt. I would say it could have used a little more dill and a lot less garlic though. The sauce has a bit of a garlic after taste. But other than that, refreshing and good!
As I mentioned above I also made some homemade pita chips, which are really easy to make as well. Just take some pita bread, cut into eights, spread on a little olive oil, salt, pepper and your spice of choice (and bake at 375 for 5-7 mins). I used paprika on my pita chips and it didn’t taste right, so I’m not sure if I used the wrong spice, I thought I was supposed to use paprika, but maybe it was cumin? I’m not sure. Or maybe I put too much on there, regardless, the pita chips were so good with the Tzatziki sauce.
So it’s super easy to make and the best part incorporates fresh produce, which I love! Give it a try (better yet, find a variation that you like on the internet and try it) and let me know what you think!
