Cinco de Mayo – bring on the salsas!

I love spicy hot foods, so Cinco de Mayo allows me to celebrate with Mexican and Tex-Mex cuisines. Salsas are versatile and great ways to enhance the flavors of these dishes.
We are fortunate that Florida growers produce all you need for a classic tomato salsa- tomatoes, garlic, onions, peppers, cilantro, an occasional lime… Why not try to create your own salsa using tomatoes or watermelon or sweet corn or whatever fresh produce you want?
Experimenting with flavors is fun and if you follow a recipe but don’t like one or two of the ingredients, that’s fine. Raw onions and peppers don’t do it for me, so I use onion powder and either ground red hot pepper or jalapeño seeds (the hotter the better!) in place of the fresh. Sure, I like jarred salsas a lot, and boy are they handy in a pinch, but fresh salsa is SO GOOD!

However you celebrate on May 5th, try your own version of salsa. Of course, you can wash it down with this!
