Enjoy Florida Watermelon
|June 3, 2009||Posted by admin under Cooking, Recipes|
Chef Justin is out of the office right now so I decided I’d post on his behalf. It’s Florida Watermelon Day today and since we had a seed spitting contest at the Capitol earlier and Florida watermelon is at it’s peak right now, I thought it’d be appropriate to post a watermelon recipe.
Here’s a recipe that Chef Justin made for one of our new brochures earlier this year. I tried it myself, it is delicious. Give it a try and let us know what you think!
Open Face Watermelon Sandwiches
Yield 4 Servings
¼ medium sized Florida watermelon, seeds and rind removed
1 handful of fresh mint leaves, chopped
8 ounces goat cheese
½ loaf your favorite crusty bread
Virgin olive oil
Kosher salt and fresh ground pepper to taste
Crumble chilled goat cheese into a small bowl bowl. Lightly mix cheese and chopped mint.
Taste for seasoning and adjust with salt and pepper. Cut bread into 8 small slices, and drizzle with olive oil. Toast bread slices until golden brown, and crispy on top. Let bread cool slightly.
Spread cheese mixture on the top of each slice of bread. Cut watermelon slices into fun shapes and layer watermelon on top of cheese. Lightly season the top of the sandwiches with salt and pepper. Serve at room temperature.
