How to: Florida Mangoes

Cutting up a Florida mango can go wrong if you don’t know how to do it properly. Here’s how I do it!
The large mango seed runs through the center so it is important to understand where to make the first cut. Hold the mango down so that the flat sides are vertical to the cutting board.
Make the first cut about a half an inch from the center on one side and continue down until all the way through. If you run into the seed, pull the knife out and adjust over a quarter of an inch until the knife easily cuts all the way through.
Repeat cut on other side.
Hold the cut sides of the mango down with the flesh side up. Carefully make 1/4 inc cuts in a crossing pattern making sure not to cut all the way through the skin on the other side. Repeat with the other half.
Gently turn the mango inside out and cut the now protruding square of flesh from the skin. Repeat with the other half.
After this process there will still be useable flesh attached to the seed. Use a small knife to peel the skin off and trim the rest of the flesh from the seed.
