How to: Florida Bell Peppers

Here’s a quick how-to on cutting bell peppers.
Lightly wash and dry peppers before use. Lay pepper down on its side so it will stay still on the cutting board.
Cut pepper lengthwise, rotate pepper and cut the same way. Continue to cut and rotate until the flesh on all sides has been removed. Discard stem and seeds.
Lay each flat piece of pepper down on the cutting board. With a horizontal slicing motion, remove the white rib parts of the pepper. Continue on all pieces of pepper. (This step is not necessary; the white rib part of the pepper is edible, however it is usually removed for a cleaner look.)
Slice the pepper pieces into long thin strips. (Size depends on recipe or use.) At this point you can use the pepper strips or continue for a dice.
Line a few of the pepper strips up together. Cut the peppers uniformly until you have a small dice. Continue cutting all the slices into a dice.
