Apalachicola Bay oysters are recognized by top chefs as some of the best oysters in the country, noted for their mellow flavor, plumpness and balanced saltiness. Apalachicola Bay, with its warm shallow water fed by the fresh water of the Apalachicola River, and undeveloped shorelines provide an excellent environment for oysters. More than 90% of Florida’s oyster and 10% of the nation’s oysters come from Apalachicola Bay.
