Resolving to Cook More

In an earlier post, I mentioned that one of my 2011 resolutions is to cook more. Last night some friends invited me over so that we could make dinner together. How fun!
We decided on pasta with fresh vegetables, salad and garlic bread, so they did the shopping. They deliberately picked as many Florida items as possible, saying that they knew I would check everything to see where it was grown.
Of the six of us, everyone had a task, including the children. The nine year old peeled the garlic and chopped it in the chopper, the three year old sat around looking cute, and the rest of us washed, cut and cooked.
While the pasta was cooking, we took a little olive oil and threw a lot of garlic into a wok, and then added zucchini, broccoli, two kinds and colors of tomatoes, and mushrooms, all from Florida. In another pan were Florida red peppers, as well as hearts of palm and baby corn. The rest of the garlic – yes, we used the entire bulb! – went into the garlic bread. A sprinkling of Asiago cheese helped round out the pasta and veggies, and a fresh mix of Florida lettuces in the salad added another dimension to the meal.
It was a great way to spend time with friends. As a bonus I’m off to a great start in keeping my resolution!
