Celebrate the Mango!

I just saw that Florida mangoes are in good supply already this year so I thought I should dedicate a post to the almighty mango! Sweet and juicy, it’s definitely one of my favorite fruits. The flavor always reminds me of summer here in Florida. Here are some delicious mango recipes to try out!
Wait, what’s that you say? (Yeah, I can read minds.) Mangoes are a pain to cut? Tell me about it. I’ve got a solution for that, though! A few years ago we posted this pictorial from Chef Justin on How to Cut a Florida Mango.

Okay, now back to the recipes.
Grilled Ginger Mahi Mahi with Tropical Fruit Salsa – The pretty picture for this recipe has always caught my eye. The combination of flavors sounds amazing, especially if you love ginger as much as I do.
Avocado, Tomato and Mango Salsa – This recipe boats 5-stars on Allrecipes with over 500 reviews. You know it HAS to be good! Love the comments: “This salsa will have you eating it with a spoon!” “This was gone in no time!” “The only problem is to stop yourself from making it all the time!”
Mango Bellini – Brunch anyone? These simple yet tasty drinks are cool and colorful. You can get fancy and garnish the sides of the flutes with mango cut-outs or just skip the pretty stuff and enjoy.
Chef Justin’s Mucho Mango Bread Pudding – Saving the best for last? Maybe! I’ve made this one and really liked it because it is not super sugary, and the mango really shines (I used bread instead of pound cake). If you want to be thrifty and forgo the cardamom, you could always use cinnamon. Bonus: here’s a video of Chef Justin making a different variation of this mango bread pudding on how to Do florida!
