Cool Florida Cucumber Dip

I love seeing fresh fruits and vegetables on party spreads. It makes me feel  less guilty about my glass of wine or the slice of cake I’ll most likely be enjoying at a party. But what really gets me is when this beautiful, healthy, fresh produce is sitting next to a cup of fattening (albeit delicious) ranch dressing. It kind of ruins the fact that it’s good for you when you slather it in dressing that has 15.6 grams of fat in just 2 tablespoons (148 calories). Here’s a delicious substitute that Kristopher showed me how to make one day (when we just happened to have a camera sitting around).

First, gather your ingredients. As you can see here, 1) there’s not a lot of money or work that goes into this and 2) there are no funky “ingredients” that you can’t even pronounce! Only the good stuff…

 

Dice everything up really well. Kristopher’s cucumbers were on the bigger side, but it made the dip extra tasty and gave it a good texture.

 

Dump everything into a bowl and mix.

Ta-da! Here you have it. A much healthier dip for your fresh veggies. It was so good that I could have eaten it by itself, though.

Cool Florida Cucumber Dip

Ingredients

  • 1 Florida cucumber, finely chopped
  • 2 tablespoons Florida dill, finely chopped
  • 2 cloves garlic, minced
  • 1 cup plain low-fat yogurt (about 2 small containers)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Mix everything together in a medium bowl. Chill and serve with fresh veggies or on pita bread.
