Halloween is just 2 days away! Get festive with this spooky quesadilla recipe that ghouls of all ages will love.
2 whole-wheat tortilla wraps
1/3 to 1/2 cup grated low-fat cheddar cheese
1/3 to 1/2 cup Florida orange bell peppers
1 can low-sodium black beans, rinsed and drained
1/3 cup low-fat plain yogurt
Lay out one tortilla and layer cheese, bell pepper and beans, and then add another thin layer of cheese on top. Place second tortilla on top and toast in oven at 350 degrees for 10 minutes or until cheese is melted. Decorate the top of the quesadilla with low-fat plain yogurt in the shape of a spider web. To reheat leftovers, warm in a 350-degree F oven.
