“Fresh From Florida” Recipe – Veggie Stuffed Mushrooms

November brings a bountiful harvest of fresh Florida fruit and vegetable crops, and we have recipes that bring out the flavors of fall on our website. Try these Veggie Stuffed Mushrooms, which feature Florida vegetables.
Veggie Stuffed Mushrooms
Yield 24 servings
1 cup Florida zucchini, finely diced
1/2 cup Florida radish, finely chopped
1/2 cup Florida onion, finely diced
1/2 cup bread crumbs
1/2 cup fresh Florida basil leaves, chopped
3 tablespoons Parmesan cheese
1 teaspoon freshly ground pepper
24 medium-sized Florida mushroom caps, rinsed and stems removed
Preheat oven to 375 degrees. Combine all ingredients except mushrooms; mix well. Stuff mixture into mushroom caps and place stuffed mushrooms on a large baking pan. Bake until mushrooms soften and mixture begins to brown, approximately 15 minutes.
Tip: Don’t throw those mushroom stems away; they can be used in other dishes.
