Florida Blueberry Festival Celebrates Yummy Fruit

The Florida Blueberry Festival is this weekend in the Central Florida community of Brooksville. The festival will be Saturday, May 4 and Sunday, May 5, and it celebrates the delicious blueberry.
In it’s second year, the festival promises to be fun and flavorful. There are more than 150 vendors, plus live entertainment and activities, and of course there will be plenty of fresh blueberries and blueberry baked goods for purchase!
To get you thinking about the weekend, here’s our Florida Blueberry Biscuit Cookie recipe.
• 2 cups biscuit mix
• 1 cup blueberries
• 1 cup pecans, chopped
• 2 tablespoons low-fat milk
• 1/2 cup honey, divided
1. Preheat oven to 350 degrees F. In a large mixing bowl, combine biscuit mix, blueberries, pecans and milk. Mix well and add enough of the honey to make the mixture stiff like cookie dough.
2. Place dough by tablespoonful onto a greased baking sheet about 2 inches apart. Bake until edges begin to brown, about 15 minutes.
3. Remove from oven and drizzle remaining honey on each cookie. Bake an additional 5 minutes and serve immediately.
